Naxi Stone Barbecue

Grilling is one of China’s favourite pastimes, and an excuse to gather with friends for a cookout. And though you’ll stumble across stalls selling skewers across all of China, the Naxi people fire up the grill a little differently. Move over charcoal and make room for stones–volcanic stones to be exact, from Yulong Snow Mountain and Haba Snow Mountain. The bigger and smoother the stone, the better. It takes ten minutes or so to heat up the stone. Locally-raised pork is charred to perfection. Grilled vegetables are not just a side. And while the stone is being fired up, snack on our housemade watermelon seeds and a glass of brewed red wine.
