Every restaurant at LUX* Le Morne serves fresh food – but it doesn’t get fresher than straight from the sea. Just before sundown, look out for guest experience manager Vik Chuttur as he dons his snorkelling gear and sets out into the lagoon in search of one of Mauritius’ most special delicacies: sea urchin. Highly nutritious, protein-rich and incomparable in flavour, sea urchins are best enjoyed right on the beach, where Vik cuts, cleans and serves their oyster-soft flesh to LUX* guests, accompanied by a spritz of lemon and a glass of sparkling Popcap. It’s a unique flavour experience, with a magical sunset setting.
